You can use full fat or low fat, but, you guessed it: full fat will be richer. Cheese! Buy a block and shred it yourself, the extra effort is worth it.You’ll want plenty for salting the water you boil the noodles in and some for seasoning the pasta.

I just recommend sticking with a short pasta (in other words, no spaghetti noodles!)
